PDO Beira Baixa Cheese – Yellow is a cured cheese, with a semi-hard or semi-soft, slightly yellowish paste, with some irregular eyes, obtained by slow draining of the curd after coagulation of raw sheep milk, pure, or a mixture of sheep and goat milk, by the action of animal rennet, produced in the demarcated geographical area of production.
