PDO Beira Baixa Cheese – Castelo Branco is a cured cheese, with a semi-hard or semi-soft, slightly yellowish paste, with some small eyes, obtained by slow draining of the curd after coagulation of raw sheep milk, pure, by the action of an infusion of cardoon (Cynara cardunculus) and coming from the demarcated geographical area of production. With a period of maturation of at least 40 days, it has an accentuated aroma and flavour.
