Cured cheese, with a semi-hard or semi-soft paste, slightly yellowish, with some small eyes, obtained by slowly draining the curd after coagulating raw sheep milk, pure, with an infusion of cardoon (Cynara cardunculus) and coming from the Demarcated Region, some parishes in the municipalities of Idanha-a-Nova, Castelo Branco and Fundão. Uniform straw-yellow to roasted-yellow rind, malleable, whole, well-formed and thin.
