INFORMATION
Cured cheese, semi-hard or semi-soft paste, slightly yellowish, with some irregular eyes, obtained by draining the curd, after coagulating raw sheep milk, pure, or a mixture of sheep and goat milk, by the action of animal rennet and originating from of the Demarcated Region. Uniform straw-yellow to roasted-yellow rind, with semi-hard consistency, well-formed, thin and whole.
